weekend + peanut butter oatmeal carob chip cookie balls

20121222_080159

i mean i just wanted to take a selfie of my new top from my sweet coworker, Monica!  apparently everybody needed to use the bathroom at the same time.20121222_080014doing his daily ritual.

20121222_075939

love it!  workout gear is one of my fave ever gifts to receive.   it's Nike, very light weight, has a cool design, and most important, racerback.

20121222_093323

we hit the gym and i decided to take a Total Conditioning class instead of my normal weights and cardio routine.  taking classes and teaching them are completely different for me concerning the workout part!  i do 80%+of the workout with my class, and the rest is coaching, motivating, and walking around checking for great form.  before i began teaching, seeing the instructor struggling with me provided some of THE best motivation to keep me going! so i definitely try to provide that for my members. when i'm up there on that podium, it's like i feel NO burn, seriously!  my adrenaline goes crazy the entire time. talk about an endorphin high

20121222_104345

where's waldo?

when i take a class, i feel the burn waaaaaaaaaaaaaaaaay sooner, LOL.  i feel every thing!  it's now me vs me and  i go to war with that voice inside my head telling me the burn is too much and to STOP.  but i refuse!

20121222_112305

i did the class, then 30 min of fat burning cardio and got up outta there.

20121222_112221

but not before a progress selfie lol.  Chiso and i had a day of Christmas and grocery shopping to get to, and i neglected to pack our lunches.  i knew we'd pass by that death trap of a food court at the mall and the smell of fries just might win me over after that workout! so, we had lunch at the gym.

 20121222_112714-1

and i'm glad we did! ok more like a snack.  i got a smoothie for the first time in MONTHS.  i've enjoyed eating my fruit instead of drinking it..that's my only reason.  anyway i was super surprised to see that Lifetime now has almond milk substitutions!! what!? they are always one step ahead!

20121222_112955

i got an almond delight which did not hit all my macros for meal 2, but it held me over juuuuust enough until we got home.  don't worry, i made up for it.

20121222_113531

i chose blueberry and banana for my fruits of choice; the best smoothie combo ever, i know!

20121222_113607

cold and creamy.

20121222_113458

Chiso loves the chocolate flavor of this milk too, lol! (me too)  20121222_113650

'if it's here, it's healthy.'

100% clean menu.

on to the mall!

20121222_131259

i spotted this while we were out shopping and did the most obnoxious double take ever.  miracle slimming system.  no diet and exercise required. 10 minute method. 3.99. it's called a WORKOUT for a reason, yall!  it requires an effort.  it's still on the shelf because unfortunately someone will buy this thing.  only real, lasting results come from good nutrition and exercise. that's it. that's the secret.

20121222_151530

i spent longer grocery shopping than Christmas shopping lol. i  saw these in the bulk isle at HEB and gave them a taste...score.  they are low in sugar, grain sweetened, carob chips and they taste just like semi sweet chocolate chips!  grain sweetened chocolate covered raisins from Whole Foods have been my guilty pleasure for YEARS.  it was the only place i could find them for a while, but carob has definitely gotten more popular lately!  you'll see these guys again shortly.

20121222_162919

TODAY was leg day and i had a grilled turkey and almond cheese sandwich on Ezekiel bread, a small red delicious apple, and some tomato & cucumber salad from Central Market before hitting the gym. 20121223_133805

tryin to shred these puppies!!

20121223_142029(0)

had just finished doing my heavy squats here.  i went heavy and did 4 sets of 10 of the following: barbel squats, single leg seated presses, hack squats, alternating dumbbell lunges, deadlifts, leg extensions & curls.

20121223_144601

then i followed that up with about 10 min of abs.

20121223_144923

nice burn!

 20121223_162209

i've been thinking about the kind of cookie i wanted to leave out for Santa, and i tried my hand at some no-bake peanut butter cookie balls that turned out darn good!

No Bake Peanut Butter Oatmeal Carob Chip Cookie Balls

the stuff:

  • 10 tbsp quick oats
  • 2 tbsp carob chips (can totally use any kind of chocolate chips)
  • 2 tbsp agave nectar (can sub honey)
  • 2 tsp pure vanilla
  • 2 tbsp unsweetened vanilla almond milk
  • 4 tbsp chocolate PB2

do this:

MIX! form into 10 balls and pop them into the fridge until you're ready to devour.  give them at least 30 min though.  if they are too sticky for you, add more oats in increments of 1 table-spoon.  they were just right for us though!  recipe makes 10 balls.

serving size = 1 cookie

carobcookieslow sugar, vegan, dairy-free, gluten-free (long as your oats are gluten-free) and YUM-MY.

20121223_171936

Chiso looooooooooooved them!

20121223_171941

him and his faces.

20121223_172211

more, more, more!  20121223_172327

ok we ate this entire batch, but we will make plenty more.

20121223_172341

Santa will wash them down with a big glass of almond milk!

what kinda cookies will you be leaving out for Santa this year?

plateaus + 30 min shoulder workout

the holidays take forever to get here and then they are gone just like that.  *tear*

are you back on track from Thanksgiving yet? well how much more time do you need!!?!?!  i'm good (now), but  if  your body seems to have come to a stubborn halt, or if your results seem to be going in reverse:

*lift heavier

*do a completely different set of exercises for a particular muscle group

*add a HIIT workout into your regimen to shock your metabolism  (track sprints, bleachers, stair master, hill sprints)

*take a class at your gym! (spin, weights, kickboxing, boot-camp, yoga, etc.)

*do your normal routine in reverse order

i chose a different cardio toy last night!  i know it's super similar to my fave machine (the machine with the feet) but the stride is wider, and there is an incline function.  pick machines that use upper and lower body simultaneously cause that gets your heart rate up right away and provides a full body workout/warmup.  remember, the more body parts moving, the more calories and fat you burn!  you can do HIIT on that thing or steady state cardio, you choose.

i taught my Total Conditioning class this morning and burned about 700 cals, then hit the weights for a quick 30 min shoulder work out.  i must share this burn!!

tripleset  (using moderate to heavy weight)

seated rear deltoid press 3 x 12

seated lateral raise 3 x 12

seated front deltoid press 3 x 12

***

standing alternating forward dumbbell raises 3 x 24

standing dumbbell T raises 3 x 12

barbel upright row 3 x 12

***

25 heavy barbel shoulder shrugs 4 sets

early morning workout complete and i am done for the day at 7:30am!

we went to Ruggles Green again over the long holiday weekend and i finally ordered something different -  organic turkey lettuce wraps.

not bad!  i can totally make them at home though.  lean ground turkey,  black beans, carrots, red peppers, tomatoes, bean sprouts, and corn all nestled inside a thick leaf of crisp iceberg lettuce.

i ordered a 3 cheese kids pizza for Chiso as my former little garbage disposal has become extremely picky. wonder how long that'll last...

it was a winner.

if he didn't kill it, we would have.

money well spent.  i ordered some of their famous butternut squash too as usual, and whaddaya know- he doesn't like it anymore

so i handled up on that.

Sonny ordered what i usually get- the grilled fish tacos on corn tortillas.

'pumpkin?  clearly it's a basketball. '

he tried to bounce it and everything!!!

then....fro-yo time.  i mean it was right next door.

aaaaalllll those toppings and i never really step outside my comfort zone.

no sugar added vanilla frozen yogurt, mini dark chocolate chips, sprinkles, and whipped cream.  20 cals per ounce - my kinda cheat treat!

creating a fro-yo monster :)

remember that shrimp i bought that was on sale at the same time fresh salmon was?

i finally defrosted it and threw them in my grill pan along with some raw zucchini for dinner that night.  i sprinkled some more of that sweet smokey chipotle paprika and some dried parsley on them first,

and overcooked the heck outta them.  shrimp cook so fast it's not even funny.  you're supposed to do this for all proteins, but take them off the heat just before they are done, cover them with foil, and let them 'rest'.  they will continue cooking from the residual heat.  so if you take them off when they are done, they will get chewy on you after they cool a little and they won't be nearly as juicy.

Ogechi brought me those seasonings at the perfect time cause my HEB has been outta Mc Cormick's smokehouse maple seasoning for weeks.

we don't have our Christmas tree up yet.  i usually wait until the price drops a little before we go get one.  a real one!  i love how they make the house smell.  we were able to put up a few Christmassy items though.

Chiso did his own thing and wasn't interested.

matter fact, all those boxes back there were on the floor by the end of the night.

thanks to my little elf!

disaster recovery

we got back from Vegas monday morning at 6am and went straight to work from the plane.  didn't sleep a wink on the flight or the night before.  however, Chiso did get some good sleep and snoozed the entire way home, WHEW.   you bet it was a long day that day.

while i attempted to catch up on rest, i neglected our empty fridge for two days!  i hadn't grocery shopped on Thanksgiving eve in a really, really long time.  HEB's parking lot was filled to capacity as expected, but as you see, they had every single lane open to accommodate the crowd.  take note, Walmart!!!!!!!!  AND, *big cheese* i happened to meet one of my readers in the store that night! i didn't want to scare her off, so i screamed on the inside   shout out to Nneka from Austin! *waving*

i had just hauled my cart up to the belt when she quietly stepped behind me with her hand basket.   of course i told her to go ahead of me since she only had a few things (don't you appreciate when someone does that!?) which is when she introduced herself.  just goes to show how you never know who knows you or who's watching-  treat others how you want to be treated at ALL times.

soooo, how was your TG 2K12?!

mine started bright and early at the crack of dark.  i left Chiso and Sonny slobbering and snoring to run the annual Houston Turkey Trot 10K.  i love that the free t-shirt this year is long sleeve; that's rare.  i have not run long distance in forever, smh, but my cardio @ the gym definitely helps keep my endurance up.

before i hit the road, i made and devoured these babies:

coconut caramel pistachio pancakes.

i used the base recipe for my banana pancakes and added the toppings- raw unsweetened coconut flakes, chopped bananas, Walden Farms caramel sauce, and crushed pistachios.

racing fuel!

might as well call these dessert pancakes- they were off the chain.

over 12k people laced up their running shoes and showed out on Thanksgiving morning.

i was standing around and counting down to start time and noticed the people around me had on such cool colorful running shoes!

i don't like the front or the very back, but the middle serves me just fine!  i was about two minutes or so from the starting line.  and yes, i ran with my phone in my hand the whole time. i need a fanny pack.

finished around 50 minutes or so.

just wanted to support the cause and get some exercise... didn't care about breaking or making any PR's.

forgot to stop my watch immediately afterwards as usual, but i burned somewhere in the high 600's. which was only like half of one of my Thanksgiving plates

my heart rate really got up there! normally when i do HIIT, i top out around 176 before my HR starts to decline.  when i heard a lady shout  'last mile!!!' i turned my burners on and sustained my HR above 180 until i crossed the finish line. my legs and chest were on FIRE.

post race, you can find me by the food.

they gave out some flavored vitamin water, bananas,

and chewy granola bars.  chocolate chip, peanut butter, and a smores flavor.

i met up with my friend Nichola post race- she competed in Vegas for Fitness America Weekend as well!  always posing;)  and sorry Nichola, no donuts at the post race party LOL

by now i am almost sick to my stomach of seeing plates of Thanksgiving food on Instagram so i'm gonna chill on sharing mine.  i will, however, share my 5 ingredient dump cake recipe!  indulgent, um yes.  so you should prolly stick to making this on holidays only.

1. canned cherries. i was über happy to see this 'no sugar added' variety of cherry pie filling, but was bummed that it was still sweetened with Splenda. womp, womp. however i got it anyway cause the original stats were just way too high. i couldn't do it.  i'm a changed woman.

2. pineapple chunks.  the 'skinny fruits' caught my eye like the manufacturers intended, but that big Splenda stamp ruined it again.

so, i grabbed what i always use- dole.  a little higher in the calories and sugar vs. the Libby's, but it's still all natural and no sugar added.

dump the can of cherries into a pan

followed by the pineapple chunks, juice and all.

3. box of yellow cake mix. it's not pictured, and any brand will do.  pour it on top of the cherries and pineapple.

4. stick of butter  yeah, those are pads of butter.  they melt into the yellow cake mix when baking and form something so incredibly delectable and Paula Deen approved.  i mean you don't have to use the entire stick though, and you could very well substitute it with a lighter whipped butter, Earth Balance, or Smart Balance spread instead.

5. pecans. sprinkle them on top before popping the whole thing in the oven for 1 hr on 375-400 deg.  no stirring required! hence the name, dump cake.

so............how many times have you admired your Thanksgiving food baby in the mirror today?

do NOT let that or food guilt completely ruin the happy, positive memories of  Thanksgiving 2k12.  you ate those delicious foods cause you wanted to and you've been waiting all year for them.   you may have woken up with a tummy ache and the need to make a mad dash to the rr like i did this morning lol, but that's OK.  like most people, i ate a lot of carbs  and white sugar: pie, cake, dressing, rolls, etc, so i did cut some of my carbs today to balance my intake, but i did not cut them out.  do this:

  • get back on track with your clean diet - do NOT starve yourself.
  • physical activity...asap.  hit the gym for your routine as normal, or go outside for a walk, jog, or run.   you'll feel a lot better, instantly.
  • drink plenty of water  and green tea with each meal as it speeds up digestion.
  • let the food guilt GO.
  • chunk the leftovers or give them away.  if the temptation is too much, stop torturing yourself and get rid of them. liquid soap to the rescuuuuuuuue

i slept in this morning but i made my way to the gym eventually for some cardio and light leg work.

20 minutes of HIIT on the stairmaster (60 rest rate / 90 work rate), legs, then 40 minutes of steady state cardio .  yep, put in a little extra work to combat yesterday's feasts.

i bought some chicken drumsticks a few weeks ago cause i could not pass up the sale price, so i went ahead and made them for dinner for the weekend.  we have been eating only chicken breast for........a really long dang time!!!

it's nice to eat a different part of the bird for a change. smokey chipotle paprika drumsticks.

i do hope your Thanksgiving was filled with family time, memories, lots of good food, and fellowship.

if i had ten thousand tongues, i could not thank the Lord enough!!!!!!!

dark chocolate pumpkin spice fudge brownies

crazy good 5:30 am workout this fine tuesday morning!  got through 1 hour of Total Conditioning,  a Lifetime Athletic signature formatted class.  almost 700 cals burned!  i set aside some time every monday to sit down and write out exercises for my class.  i have always sucked at making up stuff on the spot- that never goes great for me.  like i could never be given a mic and asked to 'say a few words' at an event... omg.  i'd totally pee on myself.  however if  i'm to speak about health, fitness, or FOOD, i'd be straight!!

i'm no longer unbeweavable.  i know sew-ins are supposed to last way longer than one month lol, but that's all i could take.  i definitely sweat out my perm this morning and i'll be smelling it for the next few days.   aaaaand so will anybody on the elliptical to the left and right of me

after  my class, i did a quick upper body circuit cause i didn't get to finish my workout from last night. i did:

bench press 4 x 10

machine curls 4 x 12

machine tricep extensions 4 x 12

machine pull ups 4 x 10

pushups 4 x 10

cable flyes 3  x 12

with moderate - heavy weight.   didn't do abs cause i do them at the end of my class.

breakfast was my banana-cinnamon oats and spinach egg white omelette as usual. dinner last night though.....

i was imagining making and eating this while on the elliptical, not even kidding.  could not get home fast enough.

grilled chicken BBQ pizza.

i used mc. cormick BBQ seasoned grilled chicken, Trader Joe's organic pizza sauce, roma tomatoes, shredded rice cheese, and fresh cilantro on an oatmeal/egg white pizza crust.  i made two out of one serving and killed them both immediately.

are you stocked up on canned pumpkin through the winter? lol.  i have way too many cans of it in my pantry right now.  i bought so many at once though cause there was a shortage last year.  i use canned pumpkin all year round though, and pumpkin pie is my fave next to key lime.   pure pumpkin is low-fat, low sugar, low carb, and has plenty of fiber.  great for sweet and savory dishes, just like sweet potatoes.

i cannot wait until Chiso can participate more with me in the kitchen!  i have so many fun cooking projects planned.  for now, he's my studio audience and listens to all my cooking demos.  yeah right, he only sticks around if i give him snacks.

my little hamburglar munching on strawberry magic pop, his fave. this week.

Sonny requested brownies, so i made some with canned pumpkin. who the heck knows who created this recipe first, but i got it from Hungry Girl a couple years back.  it's just 1 can pure pumpkin mixed with 1 box of  brownie mix.  no oil, eggs, or butter.  i added a few thangs though.

dark chocolate pumpkin spice fudge brownies

the stuff:

  • 1 box fudge brownies (your fave brand)
  • 1 can Libby's pure pumpkin
  • 1/2 tsp pumpkin spice
  • 1 tsp vanilla
  • 1/4 cup dark chocolate chips (optional)

i cut 15 servings outta my loaves.

do this:

set oven to 350 and mix everything together in a big bowl until smooth.  no lumps or dry spots.  cooking times vary..but since the batter is thicker than normal, take it out after baking it for the required time according to the kind of pan you use and do the toothpick test.

hey, the stats are still waaaay lower than the normal box recipe.

made two loaves instead of using a rectangle or square pan- one with chocolate chips, and one without. which was stupid cause all our visitors ate the one with chips.

and that's why!  i microwaved a piece for a few seconds until the chocolate melted a little, then topped it with some vegan whipped topping (found at HEB in the vegan/produce department).

YUM-MAY.

what are you gonna be for Halloween this year?

grocery finds

i know variety is important, but my breakfast just ain't right without my oats (either in a bowl with toppings or in my pancakes).  i NEED them. i'm still finding new ways to eat them every single day.

i made saturday morning's bowl of oats with Silk unsweetened vanilla almond milk, a few drops of vanilla creme stevia, lots of cinnamon, half a banana, some chocolate pb2, and some unsweetened coconut flakes.

and my daily egg omelette of course topped with fresh cilantro and pineapple salsa.

i did about 30 min of fat burning cardio on the elliptical + an upperbody weight workout and high tailed it outta there. we had a few birthday parties to attend as well as grocery shopping to get done, the usual!

i'm doing a fitness challenge via IG (Instagram) right now (@fight_for_healthy).  my goal is to add more definition to my body overall, especially in my abs.  also, i plan to eat as clean as possible for the month of october.  but these birthday parties though...  expecting big changes next month just in time for the Thanksgiving holidays. oh boy.

for meal 2, i cracked open some canned salmon (fresh is too high right now @ HEB)  and put some on a 3-seed La Tortilla Factory soft wrap along with some fresh cilantro, rice cheese, avocado, tomato, smokehouse maple seasoning, spicy mustard, and some fig butter. i  microwaved it til the cheese melted and devoured it. two of them.

in the car on the way to the party, i had meal 3 which was a salmon sandwich on raisin Ezekiel bread with the same toppings.

after running around chasing this boy the whole darn time, let's just say i'm so grateful to be in good shape!  trouble finding workout motivation?  keep your babies (or future babies) in mind.  thank me later.  i see why those child leash thingies were invented!!!

i see to it that Chiso eats nutritious, healthy stuff all day long, so of course he (we) can partake in party food every now and then.  didn't i just say i was in the middle of an october fitness challenge lol? come on,  it's not a party without cake.  i split a piece with my boo and we had a blast partying with family.  and it was the non-dairy whipped topping, not the super, duper sweet sugary kind ;)  just go with it.

after the par-tay, i guilted Sonny into going grocery shopping with us since the HEB i frequent was nearby.

in addition to my normal goodies, i got some other cool items i'm so excited about trying!!

quark. i learned about quark through a few Aussie IGers.  i had been looking for this stuff for weeks- not all HEB's sell it and few people even know what it is.  it's comparable to greek yogurt as far as taste.  nutritional stats? not so much.  not a lotta protein per serving, but very low cal, fat, carbs, and an awesome 0 grams of sugar.  ever notice just how much sugar your greek yogurt contains?  yep, even the plain varieties.

not too shabby.  non-fat ricotta cheese is another alternative to add to your fresh fruit instead of cottage cheese or yogurt.

next,

one of my guilt-free treats.  i make a two scoop sundae with vanilla maple flavored Artic Zero (150 cals per PINT)  with some soy whip. and sprinkles.  recently, Artic Zero underwent some scrutiny for incorrect nutritional stats and ingredients on their labels.  they ended up adding milk to their ingredient list (for some reason it still doesn't bloat me like real ice cream though) which upset a good amount of their consumers.  seriously... even if the stats were off a bit, come on.  can you eat a freakin entire pint of ANY of the other brands for less than 150 cals, total?  it's not that biga deal my goodness.  i'm still a fan and will continue to be! i also drizzle some healthy chocolate sauce (will share recipe soon) on top and it's an incredible, low cal, carb, guilt-free, bowl of yumminess.

i can dig it!   a little expensive for the size of the bottle though.

i taste tested it solo, and it tastes exactly like reg. ketchup. no funny after taste or any of that.  but it wasn't enough.

so i baked some Ore-ida fast food fries. it passed.

ok...i had to share this as i've been asked a few times what my cheat snacks are...and this is one.  sweet and salty chex mix.  it's even good in a bowl of almond milk!!!!  we passed by a big shelf of it and as i talked myself into not even looking in that direction, Sonny picked up the biggest bag they had and threw it in our buggy.  and i let him.

ok focus!!! back to the good stuff that's good for you and to you.  we got plenty of fresh fruits and veggies as they are at the top of my list, every time.  strawberries, blackberries, bananas, grapefruit, apples, roma tomatoes, zucchini, sweet potatoes, red potatoes, and avocados this trip.

ooooh Ezekiel... i love your bread and now i must try your cereal.  with my silk unsweetened vanilla almond milk of course. match made in heaven.

and the award for the cutest bag of popcorn ever goes to Angie's.  it definitely got my attention! sure i'm a stove popcorn popping advocate, but as healthy and fun as this bag looked, i just had to try this kettlecorn.

even vegan.  impressive.

what else can you do with an old nike box? use it to hold all your snacks. ghetto? prolly. effective. ya.  i like to keep things out where i can see them.

try a new item on your next grocery shopping trip!
