well. heeeey fit friends! i took a teeny, tiny break and recharged my blogging batteries and to put max effort into something i’m ridiculously crazy excited about. 6 days from now a dream that dropped into my spirit back in 2012 will become a reality. like, in real life!!! God continues to blown my entire mind throughout this process. i’m celebrating early with this here dairy-free, flour-free, low-sugar cake healthy vanilla banana bundt cake!
like you ever need a reason to eat cake tho.
i can say with full confidence that we (mostly me lol) are transitioning into a completely dairy-free household and it has never been easier these days. sooooo many options and alternatives out there now vs when i was growing up. heck, even just a few short years ago. that said, let’s talk about this super easy, non-dairy, 2 ingredient vanilla pb icing first
i took some So Delicious Coco Whip (i suggest using the regular version and not the light…it’s way too airy and doesn’t set as well)
and mixed it with this Peanut Butter & Co Vanilla powdered pb I walked up on randomly and couldn’t leave the grocery store without.
i combined a tub of the Coco Whip with about 2 heaping tbps of the powdered pb.
add more or less depending on your taste buds! i didn’t want the pb flavor to overpower the cake, so that amount was perfect. set it in the fridge and get crackin’ on the cake.
Vanilla Banana Bundt Cake
a dairy-free, flour-free, low-sugar healthy treat for my peanut butter & banana lovers!
Servings 12 | Prep Time 10 | Cook Time 30
- 1 3/4 cup oat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 whole eggs
- 1 cup ripe, mashed bananas
- 1 tsp vanilla extract
- 1/4 cup dairy-free vanilla coffee creamer
- 1/2 cup coconut oil
- 1/3 cup agave nectar
preheat oven to 325 degrees
combine oats, soda, powder, cinnamon, & salt well. (if you are making your own oat flour, add everything to your blender and blend until combined). dump into a large mixing bowl.
in a medium mixing bowl, combine agave nectar, coconut oil, bananas, creamer, vanilla, and eggs well.
add the wet ingredients onto the top of the dry ingredients. fold gently yet quickly until just combined.
pour mixture into your greased or non-stick coated bundt pan
bake for approx 30 minutes or until an inserted toothpick comes out clean
let cool completely before inverting onto a flat plate.
i usually put my pan into the fridge to speed up the process if need be! #cantwait

top of the morning! i have thoroughly enjoyed letting moderation back into my diet since we returned from Maui last month but i'm still holding tight to 16-17% body fat. i absolutely do not weigh myself daily and i don't plan on ever doing that again. they say 'never say never' but that is definitely one thing i can say 'never' about.
i love it here and that's what matters. let it GO, ladies.
once home, i made my usual 'expanding oatbran' and i took my periscope viewers along for the ride this time! check out the vid i was able to shoot interruption-free since my boys were still snoring away once i arrived. adding volume to your food keeps you full longer between meals and ya get to eat MORE for relatively the same nutritional stats, hello! love sharing little tips like these and i hope my oatmeal loving peeps appreciate this one too.
Chiso still may hate veggies...but that boy LOVES oatmeal. he specifically requested oatmeal with raisins this morning for breakfast before school. made me smile seriously big as i made it for him. sometimes we eat out of real bowls... sometimes

then we got silly! this week is Red Ribbon Week at preschool so every day the students get to wear something fun and non-traditional. Chiso couldn't wait to wear his workout gear today and he is ecstatic about wearing jammies (pajamas) on thursday! we got a quick workout in after breakfast since he was already dressed for the part. somebody tell me WHY Dego has more muscles than Chiso and i combined though!?
we are doing all this work but all he does is sleep, eat, & poop. hmph.

fall is basically here and it's back to school time, parents! we are all busy. we are all often scrambling to get ourselves and our kids together and out the door in the mornings. been there! actually i'm there every day. now that Chiso has started preschool (no tears from either of us, yay), i make sure he is focused and ready to learn before he leaves the house. how? some brefus! yes, breakfast. it's incredibly important for everybody, so don't downplay it or sweep it under the rug. statistics don't lie, peeps. easy, to-go options in the form of healthy carbs are the way to go, not unhealthy, sugary, prepackaged, instant, frozen junk. they need good, wholesome, nutrient dense foods that their bodies recognize so they can perform at their very best. start this with your kiddos NOW! they will only get busier and busier as each year passes; by the time they are teens and beyond breakfast will be second nature (and hopefully non-negotiable). parents, we must send our babies off right and set them up for success.
if ya follow my blog or my Insta account then you'd already know how much Chiso (4 yrs) despises all vegetables. however, he still loves oatmeal something serious! so when this very special delivery hit our doorstep, Chiso went BANANAS and could not wait to crack it open.

Chiso is nowhere near as indecisive as i am and chose 5 berry immediately.
there's an oatmeal cookie recipe on the back of the carton that i'm totally going to try! anyway, if you don't/can't whip out a pot to boil water, then don't.
microwave a mug of water (enough to cover the top of the dry oats) until it's pretty darn hot (bout 2.5 min),
carefully pour it into the carton, put the top on,
and in 3 minutes you've got a nutritious, power-packed, start to your busy day.
i love that:

i whipped up the apple walnut flavor for Dego. there were chunks of apple, flax seeds, pumpkin seeds, raisins and walnuts in each bite.... delish.
aaaand i ate my brekky right along side them. so exciting. lol. if you haven't seen my IG posts, my wedding anniversary is coming up and my hubby hasn't told me exactly what we're doing, but that i should pack a bikini!!!!! so, i wanted to tighten up a lil' bit these last few weeks and get serious with my nutrition. sure i eat oat bran and egg whites every morning anyway, but i miss being able to snack in moderation (quest bars, arctic zero, wheat thins, goldfish crackers, fig bars, dark chocolate covered raisins, kettle corn) whenever i please! maintenance mode (concerning my calorie intake / body fat percentage) is fun and where i belong right now, but i just want to bring my best package to the beach, hahaha. master trainer and 1/3 of the 6 Pack USA team, Brian Egwuatu quickly drew up a customized meal and workout plan for me that has got me wondering if i ever want to compete in a bikini competition again LOL! it's been 3 years or so of not having this many restrictions, but hey, the more change you desire, the more restrictions you must make. it is what it is. plus i'm working on an outrageous 2 week timeline so just know ya girl is over here STRUGGLIN' for the cause! once we are done frolicking and celebrating i will happily return to maintenance beast mode.
i HATE leg extensions!!!!!!!! that is all.

i spent mine up in the gym gettin' my sweat on and preparing for a busy day ahead.
Houston Sprouts Farmers Markets are having a gigantic strawberry sale this week!!! the 16 oz crates are 88 CENTS each right now. all i could think of was how much homemade berry-beet applesauce i was gonna make Dego. and myself. it is SO good, y'all.

so i still had tons of berries left after making applesauce and wanted to bake a healthy treat. i got a little help from Dashing Dish to create this one and it's pretty tasty! low-fat, gluten-free goodness that can be a great to-go breakfast, a snack, or definitely a dessert. just add cool whip!
Low-Fat Gluten-Free Strawberry Shortcake Muffins
- 2.5 cups Gluten-Free oat flour (i make my own using rolled oats in the Ninja Blender)
- 1 cup 0% or 2% greek yogurt (i used Fage)
- 2 eggs
- 1/2 cup Stevia for baking
- 1.5 tsp baking powder
- .5 tsp baking soda
- 1.5 cups diced strawberries
- 1 tsp lemon juice
- 1 tsp vanilla
- dash sea salt
- 1/4 tsp cinnamon
- set your oven to 350 degrees and coat a 24 count mini muffin pan with no stick cooking spray very well. NO LINERS NEEDED because they will stick to the muffin. #spoileralert
- i combined everything except the strawberries in my Ninja Blender! then i folded in 1 cup of the berries afterwards into a large mixing bowl. ***if no blender or food processor, combine wet w/ wet & dry w/ dry. mix together. fold in 1 cup of the diced berries last.
- spoon the mixture 3/4th of the way full into each muffin slot.
- take the 1/2 cup of berries left and top your muffin batter with the pieces.
- OPTIONAL: mix a little granulated stevia and cinnamon in a small bowl, then dust the tops of your muffins with the sugar mixture. nice touch!
- bake 20-25 min or until an inserted toothpick comes out clean.
