 we got fro-yo this evening to conclude my first 'relaxed' sunday in a really long time.  i was honestly emotional today thinking about the sunday class i no longer teach (we were in Miami this time last week so it was the furthest thing from my mind lol).  but now i'm back in town and i found myself letting those guilty feelings and thoughts creep back in concerning my decision to drop the class.  just taking it one sunday at a time.

first off, let me just say how BLESSED BEYOND MEASURE i am from this past weekend's Blog Elevated Conference.  just wow.  my brain is literally overflowing with info and i am JUST now sitting down to review it all. or at least try to.  pages and pages of notes.  a gigantic stack of business cards from the other awesome bloggers i met.  i'll get to it all.  after this post!

oatmeal banana mini muffins

imagedo you believe that?  this phrase has been echoing in my mind since the day i read it, several weeks ago.  i said earlier on IG that i accepted my first formal health and fitness speaking engagement and well, i can honestly say that this is THE first public speaking event i'm actually excited about!!! prolly cause it's concerning health and fitness :) .  i'd be lying if i said i wasn't nervous, but hey, if it doesn't challenge me, it doesn't change me.  time to start SPEAKING along with all this typing!  if God brings you to something, He will surely take you through it. keep walking in faith and reaching for your dreams, friends... if i can get my sometimes timid and scary behind up there and do the one thing that terrifies most people, YOU CAN TOO.20130725_080411

super ripe bananas mean what? some baking is about to go down.   for breakfast this morning after my class, i made some banana oatmeal mini muffins.  i had the boy in mind- he loves these things and as long as i keep them coming, he will keep gobbling.

oatmeal banana mini muffins:

the stuff:

  • 1/2 cup ground rolled or quick oats ( or oat flour)
  • 1 small super ripe banana, mashed
  • 1 packet stevia
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 cup unsweetened apple sauce
  • 2 tbsp greek yogurt
  • 1/4 cup egg whites
  • pinch of salt

do this:

mix real good until smooth!  if you'd like to use your food processor, that's cool too.  i kinda liked the banana chunks in each bite though.  fill your tins 3/4 of the way up and cook these guys for 7-10 minutes in a 350 degree oven. i topped mine with a banana slice, a drizzle of chocolate PB2 (mixed with unsweetened vanilla almond milk), and a dark chocolate chip.

1st lululemon product review!!

HOT french toast for Chi this morning, oat bran  banana pancakes for me!  and egg whites. you know the drill.

i didn't measure for the french toast, but i used whole wheat bread dipped in a mixture of egg whites, unsweetened vanilla almond milk, cinnamon, pure vanilla, and vanilla creme stevia.  i topped it with some Walden Farms pancake syrup. Chiso is still in love with bananas and eats a whole one for breakfast every morning, so he can lick his syrupy fingers all he wants since it's sugar-free!

for lunch, i got fancy with something i make at least 4 times a week cause it's so QUICK. and i need quick these days.

 egg whites, wild tuna, cucumbers, and tomato on some wheat toast with a dollop of guacamustard (avocado and coarse ground mustard whipped into a mousse) and sprinkled with some no-salt Mrs. Dash fiesta lime seasoning.  you don't have to make a tuna tower too, but it's FUN! right!?

i'm no trained chef, yall! yeah right!  yall better stop emailing me with those 'i can't do all that' messages!!! first off, you can, and second, who said you had to!? i do this for kicks cause it makes me happy. ok and to impress Sonny.  ultimately though, it also contributes to the fact that wholesome, healthy, nutritious food can taste as great as it looks.  presentation is important to me, but above all else, eat what's good for you, first.

Q: are you a PT (personal trainer)?

 A: no, guys! i'm a group fitness instructor!  a PT is something i've considered in the past and it's just not for me...'officially' anyway, lol!  i am certainly not opposed to the one-on-one thing, but the energy of a riled up group of athletes, the loud music, the microphone...yeah the combo of all that is what i live for.  i am in complete love with teaching classes for 24 Hour Fitness and Lifetime,  however, i do have intentions of teaching local classes (bootcamp, abs, TKB), in due time.

one of the many lower body exercises you can do for toned, strong, defined, glutes(butt), hamstrings(back of your legs), and quadriceps(front/top of your legs).

 TIPS:

  • lift your toes in your shoes and press your heels into the floor
  • have an actual seat- like you're about to sit in a chair
  • keep your knees behind your toes even at the lowest point of your squat
  • back flat, chest up, abs in, head up!
  • your stance determines which part of the legs you work, so switch it up often to target and work more angles (narrow stance, shoulder width stance, wide stance)
  • inhale down, exhale up
  • if your knees cave in toward each other as you squat, the weight is too heavy. proper form first.  always.
  • you can hold heavy dumbbells down to your sides, you can sit the dumbbells on your shoulders (my personal fave), use a weighted barbell across the meaty part of your shoulders, or use no weight at all!

HEB meal deals + banana french toast

it's cooooooold.  Houston finally got with it and the temps have dropped.  enjoy it while it lasts.  this morning though... i did NOT wanna get up.  you hear me?   4:15am came way too quick and my bed was way too comfy.  i admire my members for just showing up to class like they always do.  THAT is true commitment and dedication if i ever saw it. cause ummmm, if i didn't have to be there today.... yeah :shock:  watching them file into the studio one by one, collect their equipment, and wait in anticipation as the clock winded down to begin class gave me the energy and inspiration i needed to give them nothing short of my absolute best!!  and that cup of coffee /green tea combo didn't hurt either.   let nothing stop you from remaining consistent and making progress. nothing. especially something as petty as the weather!

and headed home to take more pics and make breakfast!  saturday i saw all this french toast on IG and it inspired me to make some of my own.  i had some again this morning with my egg white omelette and they hit the spot.  carbolicious. 20121208_101553

i used sesame ezekiel sprouted grain bread and made a sliced banana sandwich first, 20121208_101514

then, i dipped the entire thing in a mixture of:

stuffed banana french toast

the stuff:

  • 1 cup unsweetened vanilla almond milk
  • 1 tsp pure vanilla
  • 3-5 drops of vanilla creme stevia
  • 1 tbsp coconut crystals
  • 2 tsp cinnamon
  • 2 egg whites

do this:

  1. combine all ingredients into a bowl big enough for your sandwich to fit in.
  2. mix them well, then dip your sandwich in on one side for 2 seconds, then flip it to the other side for 2 seconds.
  3. immediately transfer it to a medium heated no stick pan and 'fry' it until brown on one side.
  4. flip it and brown the other side!  plate it up however you'd like and top it with more cinnamon, walden farms pancake syrup, and fresh banana slices.  i even shot it with some 'i can't believe it's not butter' spray a few times.
  5. NOM.

@  HEB this past weekend, i took advantage of one of their popular meal deal specials.  i got the two-step gumbo and the BBQ shrimp mix for free.  yep, i had some help.

 it's not considered clean, but it's all natural, decent nutritional stats, and quite good!

stats (per 1/2 cup): 60 cals, 1.5g fat, 470 mg sodium, 9g carbs, 2g fiber, 3g sugar, 2g protein

to the gumbo mix, i added 1 cup of water, another cup of low sodium chicken broth, a bag of frozen okra, cut up two roma tomatoes, some fresh cilantro,

and even though it didn't really need it, extra seasonings!  just a few dashes of my sweet smokey chipotle paprika, black pepper, sriracha, and 2 squirts of liquid aminos.  it all came to a rolling boil, then i let it simmer for about 20 min on low so it could thicken up.

i THOUGHT i had some shrimp leftover from last week's kale tacos, but nope...all gone.   wish i had realized that before i went to the store!!  i ended up using some of the bbq tilapia that you're gonna read about in a sec.   so if you have some, you can totally add shellfish, crab, sausage, etc. because gumbo just ain't gumbo without it ;)

i added a scoop of brown rice on top and Sonny mixed it all together before he gobbled it up.

when you buy the gumbo mix, you get this free.  i got to sample this stuff on some steel head trout while in the store which is what sold me on it!  i believe the cooking demo lady used olive oil to thin it out though:(  but it was soooo good. when i got home, i took 2 tablespoons of the shrimp mix and added 1 cup of unsweetened vanilla almond milk to make a creamy marinade for my tilapia.

stats: (per tbsp) 25 cals, 1g fat, 1g sat fat, 340 mg sodium, 3 carbs, 2 sugars

oh yeah, while i was @ the store, i came across these guys.  can you read that sign?  it says purple sweet potatoes are higher in nutritional value than the traditional sweet potato.  who knew? i didn't.  a friend of mine advised that i check out an Asian market  for these babies though cause that 2.98 a lb is a little too steep for me.  can't wait to try them!

now for my last unexpected purchase!  i've been drinking almond milk for like the past 3 years now and i have no plans to go back to dairy milk anytime soon, or ever.  but when i tell you i almost slurped down this whole box, you better believe it.

 Chiso hasn't been a fan of drinking milk solo, so i've just been using it to make his oatmeal instead of water so he can still get his vitamin D and calcium.  after i let him sample a little of this Horizon Organic Vanilla milk @ the store, to my surprise, he asked for more immediately!  actually i'm not surprised cause it's a little high in sugar (22g) and it's vanilla flavored. lol.  however, it's all natural, and still loaded with nutrients, so it went in the basket.

get lifted

so you're getting your cardio in.  you're slimming down overall.  awesome.  now, you want more definition, a little muscle, and a firmer, flatter tummy.  cardio won't sculpt and reshape your body like pumping iron will.  time to incorporate some weight lifting.  you can totally get your own dumbbells from walmart, academy, sports authority etc., but you can also take a class at your gym:)  i'm a little biased being an instructor and all, but i have to say again how classes are so EXCELLENT for motivation, challenging yourself, accountability, and camaraderie. try one. please.

why you should hit the weights:

 skyrockets your metabolism.  higher metabolism = more calories burned = happy camper.  it's also important to remember that the heavier you lift, the more muscle you gain which equals, yes, more calories burned!  common sense, but if you never add any weight to your bar (especially if you've been taking the same class or doing the same moves for a while) well, what are you doing? what are you really working towards?  you'll risk plateauing and not seeing any changes at all.

reduces your risk of injury, back pain, and arthritis.  muscle is not the only thing weights help build- they help strengthen the ligaments and tendons that support your muscles too.  this means you won't be injured/thrown around as easily when you're playing contact sports, doing every day activities, or fighting.  kidding.  stronger bones reduces, slows, and manages those aches, pains, and diseases.

muscle burns more cals than fat.  the more muscle you have, the more cals you burn all day long even while sitting around doing nothing important.  weights produce 40% more fat loss than cardio alone!  you read that right!  this explains why i feel so much leaner, longer (a couple days) vs. after a cardio session.  you'll start to see some ab action peeking out soon, watch.

produces stronger, longer, leaner muscles while defining, toning, and tightening overall. that nice line running down your thigh is all yours if you want it!  if you want to see change, change your weight.  lifting 2 lb dumbbells is for the birds.  go for the 5's, work your way up to 8's, 10's, 12's, etc. when you start to work harder, THAT'S when you walk by the mirror and give yourself that well deserved double-take!

increases muscular strength and endurance. you'll be physically stronger and better equipped to handle everyday stuff like walking up some stairs without getting winded or your legs feeling like hot jello.  not getting debo'ed by a heavy door.  lifting a 24 pack of water without throwing your back out. finishing your 5k strong and without stopping this time. progress feels GREAT.

your clothes will fit better.  when you no longer need to flex or 'suck it in' in order for a certain body part to be altered or lifted lol, that builds tons of confidence!  not only will your current clothes look better on you, a boost of confidence and self-esteem will make you boldly branch out and try on something you normally wouldn't;)

**ladies- embrace the weights.  NO, you won't bulk up.  is that excuse still being used anymore anyway?  in order to look like a bodybuilder, you've got to train and eat like one.  i've been teaching my weights class for over 3 years now and hello, i'm no China or Xena.  my class focuses on building lean muscular strength AND endurance, which means we do a high number of reps with med-heavy, challenging weight.  my barbel/dumbbells aren't so heavy that i can only do 8, but i can't do 88 either. the end result? definition city.

being a Lifetime Fitness instructor has its perks!  i had the pleasure of subbing a barbel strength class for another instructor sunday, and that was cool cause because lululemon was hosting their r&d (research & development) party that afternoon for the lifetime city-centre instructors!!

i went there immediately after class, family in tow.

as i signed up,  the lovely lady in the front excitedly explained that we would be getting a free gift.  the first thought that came to mind was 'it's a headband.' so you know i was THRILLED to hear her say 'free yoga pants!' what!? SHUT CHO MOUTH!!!

 'why can't you just get the free pants and that be it?' because, Sonny... *blank stare + side eye combo*

they had snacks- fruits, mixed nuts, and coconut water.

i appreciate a supportive top.  i have yet to meet a built-in-bra that didn't totally wimp out on me after a few machine washes.  i sometimes double up on sports bras so i can wear the cuter tops and not risk exposing myself mid-jumping jack.  Casi, the lulu rep above in the pink yoga pants, (check out her fit blog too- the recipes look healthy and tasty!) assured me that this one would do the trick.  stylish and supportive. i believed her!

 i tried it out in my class this week and it worked fabulously.  the thick straps really do the trick and most important, it's not UGLY!!

 but back to sunday. enough shopping, time to eat.

so we kept hearing all this commotion and engines revving- apparently there was a car show going on just outside.  i'm not really into that sorta thing, but they were cool to look at.

they put dried blueberries  and jicama in their side salads. it's different and it works.

i ordered the 'famous butternut squash' for my little man.  ooooooh, whatever is in that sweet, crunchy topping i MUST find out.  i shamelessly ate more of it than he did.because a meal isn't complete without dessert.  gotta end on a sweet note.
