Gluten-free Strawberry Shortcake Muffins + GIVEAWAY TIME!!!!!!

 i spent mine up in the gym gettin' my sweat on and preparing for a busy day ahead.

Houston Sprouts Farmers Markets are having a gigantic strawberry sale this week!!!  the 16 oz crates are 88 CENTS each right now.  all i could think of was how much homemade berry-beet applesauce i was gonna make Dego. and myself. it is SO good, y'all.

so i still had tons of berries left after making applesauce and wanted to bake a healthy treat.  i got a little help from Dashing Dish to create this one and it's pretty tasty! low-fat, gluten-free goodness that can be a great to-go breakfast, a snack, or definitely a dessert.  just add cool whip!

Low-Fat Gluten-Free Strawberry Shortcake Muffins

the stuff:

  • 2.5 cups Gluten-Free oat flour (i make my own using rolled oats in the Ninja Blender)
  • 1 cup 0% or 2% greek yogurt (i used Fage)
  • 2 eggs
  • 1/2 cup Stevia for baking
  • 1.5 tsp baking powder
  • .5 tsp baking soda
  • 1.5 cups diced strawberries
  • 1 tsp lemon juice
  • 1 tsp vanilla
  • dash sea salt
  • 1/4 tsp cinnamon

do this:

  1. set your oven to 350 degrees and coat a 24 count mini muffin pan with no stick cooking spray very well. NO LINERS NEEDED because they will stick to the muffin. #spoileralert
  2. i combined everything except the strawberries in my Ninja Blender! then i folded in 1 cup of the berries afterwards into a large mixing bowl. ***if no blender or food processor, combine wet w/ wet & dry w/ dry. mix together. fold in 1 cup of the diced berries last. 
  3. spoon the mixture 3/4th of the way full into each muffin slot.
  4. take the 1/2 cup of berries left and top your muffin batter with the pieces.
  5. OPTIONAL: mix a little granulated stevia and cinnamon in a small bowl, then dust the tops of your muffins with the sugar mixture. nice touch!
  6. bake 20-25 min or until an inserted toothpick comes out clean.

i had been home for hours been home just a lil' while from teaching my 530am HIIT class and hadn't even showered yet but i had to capture this glorious moment with my AZ goodies!  keepin' it real!  no highlight reel over here.  perfect pictures all the time make me apprehensive.  that's just not real life.  plus those 'Perfect Picture' apps i recently found out about (i'm so outta the loop)... i mean, after using it once i'd feel like i'd have to use it every single time and that no picture would be worth posting without it. so i just won't use it at all!  that's just me though.   getting sexified from head to toe is fun too (it's part of the reason we work out, hello) don't get me wrong, but i love meeting followers out in the streets and being in my element = bun, headband, gym clothes.  i should be easily recognizable that way lol #nofilter

the new chunky pints all have bits and chunks of goodies in them!  75 cals per 1/2 cup serving and 300 cals total for the entire pint.  they are lactose-free, gluten-free, non GMO, fat-free, low glycemic, Kosher and a highly recommended fit frozen dessert.

 what you're seeing up there is bits of graham cracker crust in the key lime pie chunky pint. YES!!!! THIS is what i have been waiting to devour and i finally have. two thumbs waaaay up from me. key lime pie is my fave (Papadeaux's specifically) but i said i was gonna make a completely RAW key lime pie for my birthday which is coming up faster that i expected, sheesh. it's all about the kids now anyway; i don't even remember mine is coming until somebody mentions it.  next on our tuesday to-do list was breakfast!

with hidden veggies! yeah, it's fun being a professional veggie sneaker and all, but i do wish i wouldn't have to go through 'so much' just to get my 3 yr old to eat them.  nevertheless, I CAN'T EVEN with how good these cakes were.  and there's a Chocolate Covered Katie inspired greek yogurt frosting on top!

 i roasted the carrots on 400 degrees in the oven (spread them in an even layer on a foiled pan) for about 30-40 min or until they are super soft.  i did drizzle them with about a tbsp of raw honey first.

Roasted Carrot Cake Pancakes

the stuff:(source)

  • 1 1/4 cup whole wheat pastry flour OR all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/8 tsp nutmeg
  • dash ginger
  • dash cloves
  • 1/4 cup coconut sugar OR brown sugar
  • 3/4 cup unsweetened cashew milk
  • 1 tsp melted coconut oil
  • 1 1/2 tsp vanilla extract
  • 2 large eggs
  • 1.5 cups roasted carrots

do this:

  1. add every single ingredient to your blender or food processor
  2. blend until super smooth
  3. heat your griddle to 400 deg or set your cast iron skillet to med-high heat and coat with no-stick cooking spray
  4. spoon batter onto griddle by the tbsp; cake size is up to you!
  5. once bubbles start to form on top (3-4 min), flip the cake and continue to cook for another 2-3 min or until lightly browned.

top with raw, shredded carrots, greek yogurt icing, and pecan. keep scrollin' for that icing recipe!

Cinnamon Vanilla Greek Yogurt Icing: (combine & mix!)

  • 1/4 cup + 3 tbsp Tofutti dairy-free cream cheese (softened)
  • 1/4 cup + 2 tbsp dairy-free greek yogurt
  • 4 tbsp Stevia for baking or Truvia
  • 1 tsp vanilla extract

quick WF stop

i'd rather go grocery shopping than to the mall any day. HEB (plus) holds a very, very special place in my heart. whoever introduced the idea of sampling stations all across the store just gets IT. the more you let people snack and try things, the more likely they fill their baskets up with stuff they never even planned on getting. i voluntarily fall for this every single time. before HEB, my fav store was Whole Foods. i don't frequent WF as much anymore as it has become more of a specialty foods store for me. i usually go there for their prepared foods (pizza, sandwiches, soups, sweets), or items that aren't sold in HEB of course. i received a gift card for Christmas that i have been waiting to use, so Chiso and i stopped by WF on our way home this afternoon.

as usual, i spent the majority of our time in the bulk isle. is it really cheaper to shop this way?  sure i'll do the calculations sometimes, but other times i just don't want to. i just like the idea of scooping out however much i want, and writing the plu number on the twist tie. it just makes my grocery shopping experience so much more interactive and cool. if i don't want to buy a whole box of something, i'll get a small amount of it first and see how that goes. never made quiona before, but i saw it and scooped away.

 they had hummus on sale for 99 cents ( i couldn't believe it either) so i got two new flavors along with some chips for dipping.  i usually eat my hummus with vegetables (cucumbers, carrots, tomatoes) but Sonny likes chips.  i had never seen the cocoa flavor and the limited time only tag made me go for it. they were on sale 2 for 5 anyway.

by the way, WF has THE best key lime pie.  every aspect of it is just right. slighty sweet, crunchy crust..tangy, velvety filling...topped with a cloud of homemade whipped cream. yes.

 after doing a two a day (1 hr of total conditioning at the gym that morning + a 4 mile run after getting home from the store) you bet i ate and enjoyed every last morsel of that pie.
