my grandma had 12 kiddos (6 boys, 6 girls) and there was even a set of twins up in there!  they turned 50 this past weekend and we celebrated with an old-fashioned house partaaaaaay!

we partied til midnight but had to go pick up the boys afterwards and got home at 1-ish. needless to say, i was NOT ready to get up and drive across town for instructor training the next day.  but first..... COFFEE.

it was worth it though cause i got to see my girl and master Lifetime Fitness trainer Abrea again! i've been seeing her at least once a year for various trainings for the past couple years and i never get tired of listening to this woman (she's the one with the cool hair on the left).  i also saw my instructor friend and rock star Olga (yellow tank) and NEW instructor Maria(top)!! Maria has taken my early LT classes for a good while. i'm excited she'll be able to sub for me if i never need one lol. congrats to her on teaching her first class recently!

Abrea taught a fan-flippin-tastic Barbell Strength class and we all loved every sweaty second of it.  i love working out with other instructors cause the energy in the room is INSANE!! so fun, so educational, and so needed to keep my own BBS class exciting and refresh my love for being an instructor period. see ya next year, Abrea! 

this is what i snacked on throughout the day: fresh fruit, veggies, hummus with a few pita chips, BBQ chicken breast chunks, oatmeal, eggs, and water.  i slept as long as i could so i didn't have time to make my breakfast at home.  thank you, LifeCafe!

after i got home, meal prep time!!!!! have you checked out the hashtag on IG?! --->#FFLCleanEatingChallenge<---  i jumped online and saw everyone else prepping too and got SO inspired all over again!!! yall are DOIN' IT!!! i gave 3 options for protein and made two of'em: Apple Turkey Burgers and the Sticky Spicy Chicken.

meanwhile.....man i missed these guys.  and i missed church that day too!  luckily our church adds their sermons online so i still caught it. the next morning i was tired as crap, yall. not even gonna sugar coat it.  sunday is usually my rest day so i was beat after that long day of training.  i wanted to hop on Periscope super early and motivate yall for this challenge somethin' serious but my body couldn't and wouldn't get out the bed! so i slept in way later than normal and did not feel bad about it. i made breakfast immediately once up though and got going!  Chiso wanted in on the challenge too lol so he had what i was having.

ok, i know it's only been ONE day but i am CRAAAAZY proud of yall!!!! seriously!!!! it's one thing to talk about changing... but when you put forth the effort to actually MAKE IT HAPPEN you are well on your way! i told yall i'd be watching via social media and i am ON IT. way to go yall! KEEP IT UP!

why is wednesday referred to as hump day? i heard the reasoning years ago but Googled it anyway to reconfirm as i typed this post:

'Starting around 1965, Wednesday began being referred to as “hump day.” Smack dab in the middle of the traditional work week, arriving at Wednesday symbolizes that we've made it over the hump and the weekend is in sight.'

sounds about right!  not working a traditional job since the beginning of 2013 when my IT contract ended has diminished the 'monday blues' and those feelings of always wanting to speed through the week to get to friday and the weekend.  i am a WSAHM (working stay at home mom) and being here with my boys has taught me to slow the heck down and live in the now.  i look forward to every single day!  yeah, entrepreneur life is a scary, huge sacrifice (especially with young kids in the mix) but i would have never, ever gotten the chance to GROW as quickly and as much as i have these past 2 years in every. single. aspect. of the word.  each day is a new adventure over here and i am head over heels in love with this temporary journey with my boys (Dego is 9 months already yall, DANG.) now that Sonny is no longer working a traditional job either (this is now week 4) and his schedule allows him to be with me and the boys more often, we have been taking full advantage of this blessing.

the endorphins were flowing after our workout this morning so we made quick vlog! i also included 2 clips of some of exercises we did. we focused on unilateral training (one leg at a time) for most of the exercises instead of both.  why?  sometimes when you train both arms or legs together, you can cheat by letting your dominant side do the brunt of the work.  so, working them one at a time helps you:

  • create balanced growth and development in both limbs equally
  • correct size asymmetries
  • improve general balance
  • engage smaller muscles like the abductors, gluteus medius, and quadratus lumborum in ways we can't duplicate training two legs at a time.

i found the Ranch Tuna Creations, woo, hoo! someone mentioned this flavor on Instagram and i had never seen it until the last time i was at Walmart. i like. i didn't add a thing and ate it straight from the packet while out and about today.

i whipped up a snack using my Ninja Blender single serve thingy and Dego loooooves this combo! it's 1 heaping cup of all natural, unsweetened applesauce + 1/2 cup roasted beets (you can do frozen or fresh and even canned if you must) + 4 or 5 strawberries.

i could not stop eating it myself! tasted way better than those prepackaged flavored applesauces in stores. but you knew that already, right!

for my meals 4 and 5 i had quesadillas using La Tortilla Factory light flour tortillas.  they were stuffed with spinach, onions, mushrooms, Weber Beer Can Chicken seasoned chicken breast chunks, and Lisanatti almond cheddar cheese.

i folded them in half and cooked them on my griddle for 2-3 min on each side until the cheese started to melt and the tortilla was crispy. no avocados in the house :( but this citrus pineapple Pace Picante sauce sufficed!

now i'm going to lay down, blink, and it will be time for me to get up and go teach my Barbell Strength class. GOODNIGHT!

Peanut Butter Oatmeal Chocolate Chip Brownies

2nd Barbell Strength class back from maternity leave under ma'  belt! i used class as my warm up and went downstairs to get a solid back workout in afterwards.  i'm taking my time, trusting the process, and sticking to my 6 Pack USA plan these days.  i want to maintain balance and not go crazy with the exercise this time around. no need!  well, as long as i'm sticking to the nutrition part of the plan too.

most likely cause Sonny surprised Chiso and i with this really, really, magically, delicious lemon bundt cake tuesday from Nothing Bundt Cakes, ugh.  he says they were randomly giving out free mini bundt cakes to the companies in his office building. is that not the best marketing strategy ever?? um, it worked cause now i want one and will most likely use them for a future event. that reminded me of HEB's and Whole Food's sample stations throughout the store. if you feed me while i shop, well hey, i'm coming back there again and again to spend my money. and eat. and buy things that were never on my shopping list. and blow my grocery budget. genius. ok anyway, soon as i eat white sugar i just want more, more, MORE. sugar addiction is real. real annoying.   Chiso was super happy but yall know how i am around large amounts of my trigger foods!!! womp, womp.  i couldn't let all my work from the past few weeks go to crap so i did have a small piece, cut Chiso some, and threw it out.  my very preggo sis-in-law was the first person i thought to give the leftovers to, but that's just evil lol! i would have taken a bite every single time i entered the kitchen until it was all gone, SMH. we are all for minimizing waste when possible, but this was a game time decision that had to be done. so, that's how these brownies came about. i was so excited about whipping them up regardless cause i haven't baked anything sweet since i was waiting around trying to get Dego outta this tummy. these are naturally sweetened for the most part; the chocolate PB2 does contain sugar but not a mind-blowing amount like Mr. Bundt cake up there. i used agave nectar but you can use honey as well. it's up to you!  heck you can also use full fat peanut butter if ya want.  just melt it in the microwave a little first for better mixability.

the stuff: (source)

  • 1 whole egg
  • 1 egg white
  • 1 cup chocolate PB2
  • 1/2 cup unsweetened cocoa powder
  • *optional* 1/4 cup rolled, uncooked oats (either leave them as-is or grind them into a fine flour)
  • 1/2 cup light agave nectar
  • 1/2 cup water + 1 tbsp water
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 3/4 cup mini chocolate chips
  • 1 tsp vanilla

do this:

  1. combine eggs, vanilla, agave nectar and water in a small mixing bowl.
  2. combine PB2, cocoa powder, oatmeal, baking soda, salt, and chocolate chips in a large mixing bowl.
  3. add the wet ingredients into the dry and stir until combined.
  4. pour mixture into an 8 x 8 or 9 x 9 pan coated with no stick cooking spray.
  5. bake for 30 minutes on 325 degrees or until an inserted coupon comes out clean.

recipe makes 12 brownies.  nutritional stats can be found on my Instagram post at the moment until i add them here!

before i go, thank you to Rosa from Enlightened Ice Cream for the coupons!! i cannot WAIT to pick up my samples at my Sprouts Farmers Market soon.  these bars are low in calories (70), high in protein (8g) and fiber (5g), 20% of the RDA for calcium, and contains only 2g of fat and 3g of sugar.  It's made from rBST-free milk, is gluten free, and contains no added sugars or artificial sweeteners!  i like. review coming soon.

oatmeal chocolate chip birthday cakes!!! - bday post

this year, my birthday fell on a monday. YIPPEEEEE :?

so Sonny started celebrating early (like i had hoped).  immediately after church service, we went to get our rings cleaned.

i promise we're only in our thirties. lol.  Chiso saw us placing our hands strategically on the display case for this pic and wanted part of the action.

over time, i have come to the realization that i'm a hint thrower.  what a lucky guy Sonny is.  rarely does one go over his head though, i gotta give it to him.  i forwarded him a Ruggles Green brunch email i received a few weeks earlier, you know, randomly.  high-five, Sonny.  high-five.

so that was our next stop.  only the Heights location serves breakfast / brunch in Houston, and i had been eager to check it out for months.  i chose the delish crab & avocado omelette and Sonny played it safe with the breakfast plate (sausage, pancakes, eggs, potatoes).  Chiso handled up on his turkey sausage, scrambled eggs, and pancakes too.  we love us some eggs.

the next day, my actual birthday, Sonny got up and rushed off to work like normal, so i hit the gym early, like normal.

but not before making this gorgeous stack of oatmeal pancakes! with the start of my cooking classes, blogging took a small backseat. obvi. but i believe i have a routine going now with my schedule. *crosses fingers, toes, and eyes*.  here's that recipe:

Oatmeal Chocolate Chip Pancakes 

the stuff: (source)

  • 3/4 cup whole wheat pastry flour
  • 1/4 cup dry rolled oats
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 3/4 cup unsweetened vanilla almond milk (add more if needed- you be the thickness judge)
  • 2 packets granulated stevia
  • 1 tbsp agave nectar or honey (optional)
  • dash of sea salt
  • 1 tbsp melted coconut oil
  • handful of dark chocolate chips

do this:

  1. mix all ingredients except chocolate chips together in a large mixing bowl.
  2. if ya need more almond milk at this point, add it a tbsp at a time.
  3. heat your griddle or cast iron / no-stick skillet to medium heat and coat with no-stick cooking spray.
  4. spoon the cakes onto your cooking device as large or as small as you'd like them.  when bubbles start to form on top, check the bottom of the cake to see how brown it is first before flipping.
  5. you're looking for a golden brown color (bout 2-4 minutes).
  6. eat'em up. sprinkles are optional but mandatory if it's your birthday.

or, you can do blueberries instead of chocolate chips!

i took a Barbell Strength class and worked my back a little more on my own in addition to some steady-state cardio on the elliptical. suddenly, i got a 'lunch?' text from Sonny, so i said 'screw this!' and sped home to get cleaned up.

   Sonny shocked our palettes and drove us to an Indian inspired restaurant in Upper Kirby called Ponidicheri.  he didn't know it was 'meatless monday' though lol. tasty  nonetheless and i appreciate the experience.

 Sonny got an omelette too.  They didn't really have a kids menu, but the guy taking orders suggested this concoction.  can you guess which two Chiso ate? yep, the fries and the Elephant Cookie.

i got a birthday nap back at home (YAAAAAY for daytime sleep) and we went back out for dinner that evening.  i was actually still full from lunch but went anyway just cause it was my bday and already on the agenda.

my cups runneth over :shock: ! literally and figuratively.  we concluded the evening with Italian food and Neapolitan gelato from Sapore Ristorante, right in our own backyard.  which was awesome cause i had to be up at 4:15am  to teach my class the next day.

i feel like i'm at the age where i forget what i'm even turning and that my birthday is even coming up.  thankful to God for another year though, no doubt, and for Sonny's impeccable planning skills year after year.
