Double Chocolate Chunk Peanut Butter Cookies

our church celebrated their 15 year anniversary last sunday, woooooo!

local peeps always ask me how we found our church and here’s the 411 (definitely just dated myself, wow).  Chiso, our first born, was about 1.5 years old when we received this enormous (no really, it was beyond huge) flyer in the mail about Parkway Fellowship’s upcoming sermon series titled, ‘Vows’. it sparked my interest immediately (one cause the flyer was gorgeous and attention catching) but i’m always looking for Godly ways, inspiration, and fun ideas to improve my marriage.  getting married is cool, but staying married is the kicker, ha.  whether you're a newly wed or a veteran, there's always room for growth, friends!  Sonny and i are working on our 11th year of marriage and there are still so many firsts to experience together.

anyway, we checked out PF that weekend and whaddaya know... we never left. we’re hooked. we absolutely love sunday school (do they still call it Sunday school??) for the kiddos.  amazing programs and age appropriate take-aways they can immediately apply in their little lives.  i’ve hosted a mommy small group over the years in our home, attended a few couples small groups with Sonny,  and i’m in the process of starting up another small group geared towards women's total fitness (physical, mental, spiritual) in the Fall!  after church,

we decided to try a local joint for dinner that opened recently, Harlem Road BBQ!

it was terrible. haha, #NOT.  we killed the entire spread within minutes.  we will totally be back to support this small, thriving business.

it's cookie time! i made these dairy-free bad boys using Bare Organics Extra Rich Cacao Powder and the chocolate flavor is boomin'.

i also use the cacao powder when making homemade chocolate cashew milk for the kids, and my chocolate banana post-workout smoothies.

Yield: 24 cookies

Double Chocolate Chunk Peanut Butter Cookies

prep time: 10 MINScook time: 20 MINStotal time: 30 mins

ingredients:

instructions:

  1. preheat oven to 350 degrees
  2. in a medium mixing bowl, combine peanut butter, vanilla, coconut sugar 
  3. in a separate mixing bowl, combine cocoa powder, baking soda, baking powder
  4. combine wet ingredients with dry ingredients 
  5. add egg and beat once more; add chocolate chips 
  6. scoop out balls of dough with a small spoon and roll them in between your palms.  coat a large baking pan with no stick cooking spray and place the dough balls in a flat layer on your pan without touching
  7. add a few more chocolate chips to the tops of the cookies if you'd like (i mean why not)
  8. bake for 8-10 minutes

notes

you may sub agave nectar or honey for the sugar, or even a Stevia/Truvia baking blend.

let cookies REST for 3-5 minutes before moving them to a wire rack to cool.
