Sweet Potato Black Bean Soup

some of you OG fit foodies might remember this recipe from a few years back❤️.

my girl Ogechi is not only the author of this insanely amazing, good-for-you soup, she brought me a batch while i was in the hospital having our first born, Chiso, back in 2011. she then made and delivered us more once we got home and adjusted to life as a 3 member family.

these days, we are patiently waiting to become a 6 member family, wow! i'm 36 weeks preggo and some change and want to thank you guys immensely for the love you’ve shown towards our maternity photos! family shoot coming up next❤️. Andrea of Ethan Avery Photography made our experience waaaay too easy and fun. we seriously had some great girl time with her. i can’t wait to come back for newborn photos!

anyway, that was so, so thoughtful of Ogechi, right!? on a recent IG post, i asked you guys what’s the best postpartum gift a mama could receive, and the answers were great and so fitting. rest, alone time, a nanny, a spa day, home cooked meals…. they all contribute to that tough 4th trimester transition. y’all know which one i favored the most though🍴! healthy, prepared meals for a new mama and her family are so helpful. i know folks mean well when they drop off desserts, fast food, snacks (cookies, chips, pans of brownies, etc.) but what mamas truly need (nursing or not) in the 4th trimester is nourishment. healthy meals she can feed both herself and her growing family with. not only will she not have to get up and cook, she can rest, heal, and spend time with her new blessing!


like any homemade soup, it tastes better and better and better as the flavors all come together in the fridge (if it even lasts that long 😜). this soup is loaded with wholesome, unprocessed ingredients and is perfect for the pregnancy and postpartum stages.

beans - protein & fiber

sweet potatoes - beta carotene & vitamin A

dates - adds natural sweetness and dates re known to help the cervix ripen and prepare for labor!

if you serve up a bowl with some ripe avocado on top, that’ll provide plenty of good fat.

Sweet Potato Black Bean Soup

a light, filling, sweet soup perfect for cool Fall evenings. also great for pregnancy nutrition!

Ingredients:

  • 1-2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 3 medjool dates, pitted & chopped 
  • 1 tbsp fresh ginger, minced
  • 2 can black beans, drained and rinsed
  • 1 can red beans, drained and rinsed 
  • 2 medium sweet potatoes, diced
  • 1 can diced tomatoes, (fresh works too)
  • 1 cup sweet corn
  • 1/4 cup salsa
  • 2 tbsp smoky paprika chipotle seasoning (can use regular paprika)
  • 1 tsp cumin
  • 1 tsp smokey sweet paprika (add this for more color but it give a nice smokey taste too; optional)
  • 1/2 cube low sodium veggie bouillon
  • 1 tbsp coconut aminos
  • 1-2 bay leaves
  • 3 cups broth or stock 
  • 3 cups filtered water 
  • generous amount of sea salt & cracked black pepper to taste

Instructions:

  1. dice onion, garlic, and sweet potatoes into bite sizes.
  2. heat olive oil in large pot over medium-high heat and add onions, garlic, and sweet potatoes.  
  3. add bay leaves, paprika, cumin, sea salt, and pepper; sauté for 5 minutes.
  4. add stock to your pot along with aminos, corn, beans, tomatoes , salsa, dates, bullion cube, ginger, and top off with water.
  5. remember, the size of the soup will reduce a bit as it simmers.
  6. cover and bring to a boil; reduce heat to a low simmer and let soup cook for about 30 minutes.
  7. taste and adjust seasoning (more salt, pepper, aminos) as needed, then top with cilantro & ripe avocado or whatever you desire!
