kid-friendly and SO good for them! my kids won't eat muffins with specks of green in them, but they WILL eat green muffins! the zucchini is completely hidden...trust me.

Ingredients

batter
  • 2 cups grated zucchini
  • 2 cups 1:1 GF baking flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup monk fruit sweetener
  • 1/2 cup light brown sugar
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/4 cup coconut oil

Instructions

  1. preheat oven to 350 degrees and coat your muffin pan in non-stick cooking spray or silicone liners
  2. add zucchini, egg, applesauce, monk fruit sweetener, brown sugar, and vanilla into your high powered blender and blend until super smooth. no green bits!
  3. add flour, baking soda, cinnamon, and salt in large mixing bowl
  4. pour liquid ingredients into dry and mix until just combined. do not over-mix!
  5. distribute evenly into muffin tin and bake 24-26 minutes. I took mine out at 25 min exactly.

Notes

slap some of my vegan vanilla cream cheese icing on top, sit back, and watch your kiddos enjoy their vegetables :)


if you make mini muffins, check them at the 22 minute baking mark. (89 calories each)
