
Easy Red Curry Shrimp

Red curry shrimp with coconut milk, red curry paste, fresh cilantro & lime. Bold flavors that make for the perfect weeknight meal!
Ingredients
- 1 lb EZ peel large shrimp
- 1 tbsp coconut aminos
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 2 tsp ginger, minced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 red onion, sliced thinly
- 1/2 red bell pepper, chopped
- 1/2 orange bell pepper, chopped
- 3 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp cornstarch dissolved in 1 tbsp cold water
- 1/2 tsp red pepper flakes
- 1 13.5 oz can lite coconut milk
- 1 tbsp fresh lime juice
- 1/4 cup fresh cilantro, chopped
Instructions
- add the shrimp to a bowl and coat with coconut aminos and season with 1/4 tsp sea salt & cracked black pepper
- add olive oil to dutch oven over medium high heat. add onion and cook for 8 minutes; add garlic, ginger, red pepper flakes, and cook for 1 more minute until fragrant. season with remaining salt & pepper
- add red curry paste and stir; add peppers and sauté everything for 3-4 minutes. add coconut milk and fish sauce and bring to a simmer.
- add shrimp to simmering pot and let cook for 3-4 minutes or until shrimp are cooked through.
- add cornstarch mixture and stir for 1-2 more minutes until slightly thickened. remove from heat! serve with a scoop of steamed rice and top with cilantro & fresh lime juice.
