Turkey Sloppy Joes + Air Fried Zucchini Fries

healthy twist on this classic, kid favorite recipe! chock full of veggies and they'd never know it!

ingredients:

instructions:

turkey sloppy joes
  1. to a large skillet set to medium low heat, add 1 tbsp of olive oil. once heated, add carrots, celery, bell peppers, and onions; stir around until tender and fragrant for about 5-6 minutes
  2. add last tbsp of olive oil and garlic; stir around and cook for 1 minute. set fire to medium high heat and add ground turkey.  cook and brown meat until there is no more pink
  3. add all remaining ingredients, combine well, place the top on your skillet and let the meat mixture simmer on medium low heat for about 5 minutes 
  4. spoon mixture onto toasted sandwich bread of your choice!
zucchini fries
  1. melt butter in a shallow sauce pan and set aside
  2. add parmesan cheese, breadcrumbs, salt & pepper to a mixing bowl and combine well
  3. dump dry mixture onto a shallow plate
  4. dip and coat the zucchini in the melted butter with one hand, and do the same with them in the breadcrumb mixture
  5. place coated zucchini in your fryer basket (don't overcrowd!)
  6. set air fryer to 350 for 15 minutes 
  7. eat immediately (i mean why wouldn't you anyway😀) because they get soggy if they sit. enjoy!
