Simple 'n Sweet Corn Bread

gluten-free, dairy-free!


  • 1 cup corn meal
  • 1 cup gluten-free all purpose flour
  • 1/2 tsp salt
  • 1/3 cup organic cane sugar
  • 1/3 cup brown sugar
  • 4 tbsp melted vegan butter + 2 tbsp 
  • 2 eggs
  • 1 cup unsweetened  cashew or almond milk
  • 1 tsp apple cider vinegar
  • 1/2 tsp baking soda


  1. preheat oven to 425 and prepare a 9 x 9 baking pan with no-stick cooking spray 
  2. pour milk into a small bowl and add vinegar; let sit
  3. combine flours, salt, baking soda, and sugars in a mixing bowl
  4. add milk to dry mix and stir; add 4 tbsp melted butter and egg and mix again
  5. add 2 tbsp of cold butter to your pan and place in the oven for 2 minutes or until melted
  6. remove pan from oven and pour mixture into the center.  watch as the melted butter is pushed to the edges of the pan to form those yummy, buttery, crispy edges!
  7. bake for 20-23 minutes or until an inserted toothpick comes out clean
