Maple Bacon Butternut Squash

sweet, salty, low carb, butternut squash goodness.

ingredients:

  •  4 strips cooked maple bacon, crumbled 
  • 1 - 3 lb butternut squash 
  • 2 tbsp olive oilor avocado oil
  • 2 tbsp honey or maple syrup
  • 1 sprig fresh thyme 
  • sea salt & cracked black pepper to taste

How to cook Maple Bacon Butternut Squash

  1. preheat oven to 400 degrees and foil a 9 x 13 baking pan and coat it with no stick cooking spray
  2. poke holes all around butternut squash with a fork
  3. microwave butternut squash for 3-5 minutes (will be hot to handle!)
  4. peel and cube the butternut squash (see this video!) 
  5. to a large mixing bowl, add cubed butternut squash oil, honey/maple syrup, half of the fresh thyme, and a nice helping of sea salt and cracked black pepper 
  6. bake for 22-25 minutes!
  7. add cubes back the mixing bowl along with crumbled bacon and the remaining fresh thyme
  8. serve and enjoy!
