  1. 1 toast both slices of bread in a toaster or toaster oven until crispy throughout with no soft spots
  2. 2 break toast into rough pieces and add them to your food processor.  pulse bread until a crumb-like consistency is created
  3. 3 in a medium mixing bowl, combine all ingredients except bread-crumbs and mix very well
  4. 4 coat a large (cast iron) skillet with no stick cooking spray and set it to medium heat. Add 2 tbsp dairy-free buttery spread
  5. 5 shape mixture into 8 patty cakes and spread breadcrumb mixture on a plate
  6. 6 coat each patty completely in breadcrumbs and place onto hot skillet. cook for 5-7 minutes; flip. cook for an additional 5 minutes or until golden brown
