
Honey Mustard & Thyme Chicken

these sweet, savory, herby chicken thighs are great for dinner anytime of the week! especially wonderful for meal prep.
Ingredients:
- 8 boneless, skinless chicken thighs
- 1/4 cup dijon or course ground mustard
- 1/4 cup honey, truvia nectar, or agave nectar
- 1 tbsp coconut aminos
- 2 tbsp fresh minced thyme
- 1/2 tsp low sodium garlic salt blend
- 1/4 tsp cracked black pepper
Instructions:
- preheat oven to 400 degrees
- in a large mixing bowl add mustard, thyme, sweetener of choice, and aminos and combine well.
- add chicken thighs and coat evenly; marinate for 30 minutes minimum
- coat a large baking pan with no stick cooking spray (or foil, or parchment paper) and spread thighs out evenly, meaty side up
- sprinkle thighs with garlic salt and pepper
- bake 45 minutes or until chicken juices run completely clear when cut into
Notes:
fresh thyme is recommended but dried works fine too. massage the dried thyme between your finger tips to release its fragrant oils.
