Coconut Whipped Cream

  1. make sure your coconut cream is chilled; pop it into the fridge for a few hours first!
  2. open the can and transfer the solids only to a mixing bowl.  
  3. you can reserve the liquids for smoothies if you like
  4. add powdered sugar, vanilla, optional lemon zest and blend with your hand or stand mixer until well combined and fluffy.
