Cilantro Lime Salmon

  • 1 lb salmon fillet
  • 2 tsp extra virgin olive oil
  • 2 tbsp dairy-free butter, melted
  • 1 tbsp Truvia Nectar
  • 1 tbsp coconut aminos
  • zest of 1 lime (plus sliced for garnish)
  • 2 tbsp fresh cilantro, minced finely 
  • pink himalayan sea salt to taste
  • cracked black pepper to taste


  1. set your oven to 450 and coat a baking pan with no stick cooking spray
  2. coat fillet in olive oil,  butter, and aminos; place skin side down on baking tray
  3. drizzle with truvia nectar; sprinkle with sea salt, pepper, and half of lime zest
  4. bake 13-15 minutes or until as firm as you'd like
  5. immediately add the remaining lime zest and sprinkle generously with cilantro
  6. garnish with lime and enjoy!
