
Chicken Pasta Parmesan

Ingredients
- 8 oz rotini or pasta of choice
- 1 lb chicken breast chunks
- 1 tbsp coconut aminos
- 2 cloves garlic, minced
- 1 cup sweet corn
- 2 large zucchini, chopped
- 2 cups mushrooms, chopped
- 1 orange bell pepper, chopped
- 1 cup loose leaf baby spinach
- 1/2 cup grape tomatoes, halved
- 3/4 cup vegan parmesan, shredded
- 1 tsp garlic salt
- 1/2 tsp cracked black pepper
- 2-3 tbsp vegan butter
Instructions
- add chicken breast chunks, minced garlic, and coconut aminos to a bowl and marinate for 30 minutes minimum. overnight is best!
- set your skillet to medium-high heat and add 2 tbsp of vegan butter
- once melted, add chicken; toss and stir until just cooked through, about 5 - 7 minutes
- remove chicken from skillet and set aside, covered
- add remaining 2 tbsp of butter to your skillet on medium high heat along with zucchini, bell pepper, mushrooms, and corn
- stir vegetables around and cook for about 5 -7 minutes; sprinkle in garlic salt & pepper
- add chicken back in along with hot pasta and parmesan cheese and toss around for 1-2 minutes
- shut off the heat and add spinach & tomatoes; give everything one last toss as the spinach wilts
- serve hot with more grated parmesan on top!
