Chicken Pasta Parmesan

Ingredients

  • 8 oz rotini or pasta of choice
  • 1 lb chicken breast chunks 
  • 1 tbsp coconut aminos
  • 2 cloves garlic, minced
  • 1 cup sweet corn
  • 2 large zucchini, chopped
  • 2 cups mushrooms, chopped
  • 1 orange bell pepper, chopped
  • 1 cup loose leaf baby spinach 
  • 1/2 cup grape tomatoes, halved
  • 3/4 cup vegan parmesan, shredded
  • 1 tsp garlic salt
  • 1/2 tsp cracked black pepper
  • 2-3 tbsp vegan butter 

Instructions

  1. add chicken breast chunks, minced garlic, and coconut aminos to a bowl and marinate for 30 minutes minimum. overnight is best!
  2. set your skillet to medium-high heat and add 2 tbsp of vegan butter
  3. once melted, add chicken; toss and stir until just cooked through, about 5 - 7 minutes 
  4. remove chicken from skillet and set aside, covered
  5. add remaining 2 tbsp of butter to your skillet on medium high heat along with zucchini, bell pepper, mushrooms, and corn
  6. stir vegetables around and cook for about 5 -7 minutes; sprinkle in garlic salt & pepper
  7. add chicken back in along with hot pasta and parmesan cheese and toss around for 1-2 minutes 
  8. shut off the heat and add spinach & tomatoes; give everything one last toss as the spinach wilts 
  9. serve hot with more grated parmesan on top!
