Skinny Fat Double Chocolate Brownie Cake

ingredients:

instructions:

  1. 1. preheat to 325 and coat a 9x9 pan with no-stick cooking spray
  2. 2. add all ingredients except chocolate chips to your high powered blender and blend until super smooth, at least 60 - 120 seconds.  stop once or twice to scrape down the sides of your blender with a spatula, then continue
  3. 3. transfer blender mixture to a large mixing bowl and fold in chocolate chips
  4. 4. pour into prepared pan and sprinkle with a few more chocolate chips on top if you’d like! 
  5. 5. Bake 35-38 minutes or until an inserted toothpick comes out clean or to your desired consistency*

NOTES:

few things:

a high powered blender is recommend to get your oats as fine as possible, or you use the brand i love.  If not, you will get bits of oats in the final product (which is actually totally fine for some peeps).

oven times and temps vary!  keep checking towards the end to unsure it doesn't burn. 

*this dessert stays together when it comes time to cut it better and better as it cools. some people purposely stop the cooking process earlier (aka, take it outta the oven) because they prefer a gooier dessert. it's up to you!
