Oatmeal Raisin Chocolate Chip Cookies

gluten-free & dairy-free!

ingredients:

  • 3/4 cup gluten-free flour mix
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1.5 cups GF rolled oats
  • 1/2 tsp baking soda
  • 1/2 cup vegan butter
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup organic granulated cane sugar
  • 1/2 cup organic brown sugar
  • 1/2 cup raisins
  • 3/4 cup dairy-free chocolate chips 

instructions:

  1. preheat oven to 350 and coat a large baking pan with no-stick cooking spray
  2. in a large mixing bowl, combine flour, oats, baking soda, baking powder, salt, and cinnamon 
  3. in a separate, bowl, cream the sugars, butter, and vanilla  together. add the egg and mix again.
  4. add the dry ingredients into the wet and mix until just combined. fold in chocolate chips, raisins, and any other desired add-ins
  5. *see note below!  scoop cookies onto the prepared pan at least an inch apart.  bake 13-15 minutes or until light golden brown. 

NOTES:

after mixing, refrigerate the dough for at least 30 minutes! it makes a huge difference in how the cookies bake up. I use a small ice cream scoop and the cookies keep a nice dome shape as they bake. makes for an awesome presentation.
