  • 1 multigrain or whole wheat tortilla of your choice 
  • 1 tbsp sun dried tomato pesto 
  • 1 tbsp roasted red peppers, diced
  • 2 cups firmly packed baby spinach
  • 3 large egg whites or 1/2 cup liquid egg whites
  • 1 tbsp vegan garlic & herb spreadable cheese
  • 1 tbsp vegan fat feta crumbles
  • sea salt & cracked black pepper to taste 


How to cook Spinach & Feta Egg White Wrap

  1. coat a large skillet with no stick cooking spray and set it to medium high heat 
  2. add roasted red peppers and sauté until tender, 2 -3 minutes, sprinkling with sea salt & cracked black pepper 
  3. add baby spinach to your skillet and cook/stir around until wilted, 2 - 3 minutes
  4. remove spinach and peppers from your skillet and wipe clean; coat pan with no stick cooking spray again
  5. add eggs to skillet and cook until done on one side, approx. 3 minutes.  flip and cook on remaining side until done
  6. remove eggs from your skillet and add your tortilla (only to warm it up) about 30-45 seconds on each side
  7. on a plate, add tortilla and spread the red pepper pesto and spreadable garlic & herb cheese onto it
  8. next, add egg whites, spinach, red peppers, and feta crumbles.
  9. roll it all up tightly and slice in half if you prefer!
