Double Chocolate Chunk Peanut Butter Cookies

  1. preheat oven to 350 degrees
  2. in a medium mixing bowl, comine peanut butter, vanilla, coconut sugar
  3. in a separate mixing bowl, combine cocoa powder, baking soda, baking powder
  4. combine wet ingredients with dry ingredients
  5. add egg and beat once more; fold in chocolate chips
  6. scoop out balls of dough with a small spook and roll them in between your palms.  coat a large baking pan with no stick cooking spray and place the dough balls in a flat layer on your pan without touching
  7. add a few more chocolate chunks to the tops of the cookies if you'd like (i mean why not)
  8. bake for 8-10 minutes


you may sub agave nectar or honey for the sugar, or even a Stevia/Truvia baking blend.

let cookies REST for 3-5 minutes before moving them to a wire rack to cool.
