make the filling ahead of time for a stress-free morning! yummy whole grain, protein packed breakfast tortillas to start your family off on the best foot.

Ingredients

  • 1 tbsp vegan butter
  • 1 whole wheat tortilla
  • Leftover egg/sausage/cheese scraps from the Sausage Egg & Cheese Muffin
  • this would be a great time to stuff in some veggies! for example, a few baby spinach leaves, small broccoli florets, or diced asparagus.

Instructions

  1. put your tortilla in the palm of your hand and add ingredients to one side.
  2. fold tortilla over ingredients and form a pocket
  3. set your skillet to medium heat and add butter to your pan
  4. sear each side of the tortilla for 3-4 min or until crispy and cheese has melted
