Ingredients
- 1 tbsp vegan butter
- 1 whole wheat tortilla
- Leftover egg/sausage/cheese scraps from the Sausage Egg & Cheese Muffin
- this would be a great time to stuff in some veggies! for example, a few baby spinach leaves, small broccoli florets, or diced asparagus.
Instructions
- put your tortilla in the palm of your hand and add ingredients to one side.
- fold tortilla over ingredients and form a pocket
- set your skillet to medium heat and add butter to your pan
- sear each side of the tortilla for 3-4 min or until crispy and cheese has melted
